Heidi Swain's Cherry Topped Chocolate Cupcakes Recipe!






Cherry Topped Chocolate Cupcakes Recipe

Well this is it folks, the last day of The Cherry Tree Café blog tour and I can’t think of a better way to end than with Jemma’s cherry topped chocolate cupcakes. They’re quick and simple to make, but so satisfying they’re guaranteed to make any tea party go with a swing!

For the cakes you will need:

115g cherry jam
100g self-raising flour
50g plain chocolate
60g butter
60g caster sugar
2 large eggs



Method

Pre-heat the oven to 180 and place 12 of the prettiest cupcake cases you can find in a cupcake tin

Gently heat the butter and chocolate and mix together and then set aside to cool



Once cooled, add the jam, sugar and beaten eggs to the melted chocolate and mix well

Finally add the flour, (using a sieve to keep the mix as light as possible) and again mix well

Half fill the paper cases and cook for approximately 20 minutes or until firm to the touch

Leave the cakes in the tin for a couple of minutes before transferring to a wire rack to cool




Sweet Dreamy Topping:

250g butter
500g icing sugar (sieved)
2tsp milk



Mix together until smooth and then pipe on top of the completely cooled cakes using a large star-shaped nozzle.

Top Tip

Don’t even attempt to ice the cakes before they have cooled completely otherwise you could have a cupcake meltdown on your hands!

Final flourish…

For a true Cherry Tree Café flourish pop a cherry on top (Jemma and I prefer to leave the stalks on) and serve with a fresh pot of tea.



And don’t forget…

This final instruction is perhaps the most important of. Do not, under any circumstances, take your eyes off those delicious cakes because they have a habit of disappearing…fast!
